Asparagus & Potato Hash with Vegan Hollandaise
White asparagus season is a time for celebration, especially here in The Netherlands. It's commonly eaten with chopped potatoes, ham, and eggs, with a butter or hollandaise sauce. Our inspired vegan version is loaded with seasoned potatoes, liberally sprinkled with crunchy toasted breadcrumbs, and drizzled with a zesty vegan hollandaise sauce.Servings

Simply wonderful
Dear Sadia, dear PUL-Team! This was amazing!! We had it for our Easter-Dinner and I had never ever a hollandaise-Sauce that was so good! It was fresh and simply delicious! Er doubled the portions as we ate it as our main dish. It was so tasty and we are looking forward to make it again. Thank you for this amazing recipe! Happy Easter!!! 💚🐇
That sounds delicious! Do you think it would also work with green asparagus?
Absolutely loved this recipe.
Loved this. Put the potatoes in the air fryer and added some vegan bacon bits, delicious
Nice dish. Love the hash browns and bread crumbs. If this is the only dish, I'd recommend multiplying the amount of the asparagus by 1,5 and potatoes by 2. We needed quiet a lot of ice-cream for desert 😇
Delicious! 5/5 😍
I thought this was going to taste too oily, but with patting the potato with paper, it was delicious. Used crispy fried onions for crunch instead of breadcrumbs
This was delicious! I’m not vegan so I added a fried egg, and I swapped the asparagus with Chinese cabbage. Everything worked so well together and I will definitely make this again!
Great dish! Definitely make the bread crumbs!
