Potato & Sauerkraut Pierogi

Pierogi, filled dumplings, are found throughout central and eastern Europe, but are possibly best known in Poland. The fillings vary from mushrooms, minced meat, potato, onions, cheese, or even sweet fillings like fruit or vanilla custard. Usually they are boiled and served with toppings, but they can also be pan-fried after boiling, adding a bit of crunch to the tender dough and filling.

This is absolutely delicious. I thought it wouldn't be enough Sauerkraut to really taste it but luckily I was wrong.
We used smoked tofu instead of the bacon which worked really well.

Hey Lena, thanks so much for your interest in this one! We haven’t been able to get a gluten-free version to work reliably yet, as the dough texture is a little tricky. An all-purpose gluten-free flour blend might be worth experimenting with, especially one that’s designed for bread-style doughs. You may need to adjust the moisture slightly or add a binder like xanthan gum if the blend doesn’t already include it. If you decide to experiment with any swaps, we’d love to hear how it goes and what worked 🤗✨

I'll definitely try this recipe! Pierogi with cabbage and potatoes are a regional dish, not popular in my part of Poland, so I'm curious how they taste! I am so happy about this recipe. My boyfriend's half Polish and we usually have Pierogi nights as a date night activity. ☺️
Highly recommended for get-togethers with friends as well, Pierogis can be quite labor intensive but it brings people together ☺️
