Really enjoyed these. Quick, healthy and flavorful!
I had half a leftover zucchini, which I cut into stripes and fried up with the peppers.
I added some chipotle salsa as well. Yummy!

I made this tonight and it was delicious ! Quick to make and a nice twist to usual vegan fajitas. I cooked the portobellos til they we're golden, they were so meaty ! I will definitely do this recipe regularly :)
