This almond briouat is a bite-sized Moroccan pastry with a crispy, golden exterior and a sweet almond filling infused with orange blossom water. Traditionally it gets glazed with honey, but we made our own syrup that perfectly balances with the nuttiness and sweetness of the filling. Cherished for centuries, almond briouat is a staple at special occasions like Ramadan, weddings, and family gatherings, offering a delightful taste of Moroccan tradition.

I made a savory version of the triangles with Turkish feta cheese, olives and coriander (without the syrup of course). The way of folding them is brilliant, nothing leaks and they beautifully hold their form. Next time I’ll try with almonds.
