Beet & Nectarine Summer Salad

A solution for the heat wave : it's a no cook fresh salad, no difficult to make and original, so you don't get bored! I know the beet taste can divide, but the sauce ties it together super well and the fruits make the earthy taste less agressive for those who don't like beets. The only thing is blackberries are hard to come by where I live, and a little pricey, the only reason it won't become a weekly salad in the summer for me. Same for raspberries and strawberries, but maybe a little more affordable : I'll try with those, although my first love will go to the blackberries.

I tried it with strawberries for colleagues, and it worka charm! Once the sauce is combined with the ingredients, nobody could guess what was inside except for the beet, and they were very surprised but liked it very much! It was sweeter than with the blackberries.

I would've never thought of this combination of ingredients, but I absolutely loved it!

This salad could go with one star and also with 5 stars because it's really wild 😅

I made it as a challenge for me as I eat mostly the same in slightly different variations. And it was worth it. 😊

Wonderfully delicious salad! Loved the juicy summer fruits with the yogurt dressing. Never thought a combination like that would work, but it does!
