This one’s cozy, comforting, and full of flavour. Roasting the potatoes adds depth and heartiness, but if you’re short on time, you can totally skip the potatoes and serve the curry over rice instead. The chickpeas make it filling, the spinach brings a touch of green, and the coconut milk ties it all together into a rich, satisfying sauce. It’s hearty, simple to make, and just as delicious the next day.

super delicious! I loved this recipe very much and will make it again. For me, it was 6 portions instead of 4 (eating it with rice) :)

Hey Team! Do the calories for this recipe include rice?
PUL Team - Feb. 6, 2026, 7:52 p.m.
Hey friend! The rice isn't included in the nutrition estimate for this one 🤗 In case it helps for future recipes, optional or serving suggestions that include a portion size (like "½ lime" in this recipe), are included in the nutritional info. These portions help us feature ingredients in the cook-along mode and suggest possible swaps.
If no portion size is listed (for example, “fresh cilantro” or “cooked rice”), then it’s not counted in the nutritional breakdown. Hope this clears things up, and happy cooking✨

Absolutely delicious! I didn't have spinach so substituted that with broccoli, which I added with the chickpeas, tomatoes, etc. The squeeze of lime at the end makes a real difference.

Nice flavors, but when eaten with rice, it could have used more curry paste. We'll do a bit of tweaking next time.

A new fave curry for sure! The PUL Curry recipes never disappoint. I swapped the chickpeas for tofu and added some zucchini. It was really good!

Mmmm. This is so good! It is also possible to make with red lentils if you add extra water. And if you can find kaffir lime leaves you should really add them! They are amazing in Thai dishes.
