The scaling of this recipe has half an aubergine as one portion, which is not enough. The ratio of tofu cream to aubergine was also not for me. I've got cream left for another two meals. The tofu cream was quite bland as well, so I added heaps of herbs and spices to make it palatable. The aubergines themselves were amazing though and I'd make them again with something else.

Thank you so much for taking the time to share this, Tamara, you’re absolutely right. We originally had this recipe flagged as a side dish, which is why the portions were set to half an aubergine per serving. With your feedback, we’ve now updated it to be a meal and adjusted it so each serving uses a full aubergine. You’re also right that the cream makes quite a bit. We like to pile it high on the aubergine and then mop up any extra with the toasted bread, but that’s definitely personal preference. As for the flavour, a lot of it comes from the caramelized onions that get folded through the tofu cream. The deeper and slower the caramelization of the onions, the sweeter and more flavourful the cream becomes. That said, we’re big fans of customizing things to taste, so adding herbs and spices is always encouraged. Really appreciate your feedback, and I’m glad the aubergines themselves were a hit!
