Great recipe! I had to use 2 packets of instant potatoes, ~225grams. Also, I had to use regular soy sauce instead of low sodium and was dangerously close to being too salty. Both are easy adjustments though.
This turned out fantastic! I used frozen veg, had to make my own potato mash, and couldn’t find cornstarch, so just left it out and it turned out great!! Definitely one for the rotation.

I had the same problem with the watery potatoes. Is the milk supposed to be hot when you add it with the other ingredients? Maybe I'm misunderstanding the step.

Hi Sadia! Thank you so much for this wonderful recipe! I did have some trouble getting my instant potatoes to set using the measurements provided and I’m not sure why. Yours look so fluffy, but mine seemed to be very, very watery. Any suggestions on why that is? Could I add more instant potatoes next time to thicken it up you think?
Be careful of salt. Don't ignore the recipe and use regular soy sauce.
Quick and tasty. Prep was a bit longer because I had to make mash. Hard to find vegan instant potato in Australian supermarkets, they all use milk 🤢.
I used this to up- do leftovers and it turned out super yummy!
