Really disliked this :( The textures were unpleasant and the spice level was quite intense. Needed a greater variety of vegetables and adjustment to amount of curry paste.

Thai curry pastes can vary quite a bit in heat and intensity between brands, so reducing the amount (or starting with less and adding to taste) is a great idea. Texture-wise, this recipe is intentionally simple, but it’s very flexible! You can add more veggies like bell pepper, carrots, green beans, or zucchini to add some contrast and balance. I didn't have paste so I used cury spice mixed with oil instead. Great recepie and delicious meal, enjoyed with kids a nd eill definitely add to my regular dinner recepies!

Quite disappointed with this recipe, specially with the texture: too mushy and textureless. Not sure if I made a mistake during the prepare, but I don’t think I will try it again.

The texture might vary depending on how long the cauliflower is cooked, so slightly reducing the simmer time could help you prefer it less tender. So I used green curry paste because it was on sale at the grocery store and it came out insanely spicy! And I am someone who likes a little heat. I told my family and apparently I’m the only person in the world who didn’t know that green is the spiciest curry 😂 Anyways for anyone else out there debating between colours, I would suggest following the recipe properly haha

This was delicious! I added Mushrooms because I didn’t have enough cauliflower. I noticed the recipes don’t say how much salt to add so I added one teaspoon.

Hey Donna, yes you can substitute curry spice for the curry paste if you'd like. You could mix your curry spice with some oil and a bit of water to form a paste, adjusting the recipe to taste. Yay! A simple, yet balanced and delicious curry recipe. Had tried yellow curry paste before, but don't think I understood the right quantity to use. Can imagine using this recipe as a template with other variations of vegetables or proteins.

The curry is really tasty, I added salt at the end.
However the curry taste didn't turn red and the cauliflower needed more that 6 minutes to cook.
Altogether 45 minutes to make it.
