If you're a fan of carrot cake but can't be bothered to make a whole one, this speedy mug cake is for you. It's soft and moist, thanks to the carrots, warmly spiced with cinnamon, and finished with a quick lemony cream cheese-style frosting. Just be careful not to go overboard with the carrot, as too much can make the cake a little too wet and dense.

Wow I'm not a real baker but this dessert is genius, so easy and delicious and it definitely makes me more bake-curious :-) I am wondering if it is possible to make the cups a few hours in advance and pop them in the microwave before you want to serve them (in case of having people over for dinner).

Hey hey, Jonathan! Awe love that this has you feeling more bake-curious 🤗 we've mixed mug cake ingredients in a cup before and then accidentally forgotten about it before microwaving 😅 we found that the mixture thickened up a bit too much as it sat so we’re hesitant to say yes.
Perhaps you could mix the dry ingredients ahead of time, then mix in the wet ingredients and grated carrot closer to microwaving? Alternatively, our “Carrot Cake Cupcakes” are a similar and lovely option for hosting, as they can be made ahead of time! 🫶

Thanks a lot for the reply! The idea of mixing the dry ingredients beforehand and adding the wet ingredients later is actually quite good and should work when hosting people.

I used 1 Tbsp less sugar for the cake and it was perfect. Don‘t forget the frosting- it matches really nice and gives a Little bit of freshness. Great sweet treat for a mid-afternoon slump.

I don’t have a microwave. Can I make this in the air fryer ?

Heyy Christine! We haven’t tried baking a mug cake in an air fryer before, so we can’t say for sure. You could try baking it in an oven-safe dish at around 160°C (320°F), checking for doneness with a toothpick and adjusting the cooking time as needed 🤗 if you give it a try, we’d love to hear how it goes 🫶
