Unfortunately the mixture was too wet to form balls. I used the scale to weigh the ingredients. The apple was a small organic apple. Could I have overmixed it in the food processor? I tried to safe it by adding extra oats but I had to add so much the flavor went away.

Thanks so much for sharing this, Astrid, and we’re sorry the mixture turned out too wet. Overmixing in the food processor can make the texture softer, since the oats and beans break down more and release extra moisture. Apples can vary a lot, too - even a small one can add more liquid if it’s especially juicy. If any liquid seeps out while grating, it’s best not to add that part to the mixture. Because this recipe is oat-based, letting the mixture rest in the fridge for a little while can also help it firm up naturally if it's too wet. After that, it should be easier to roll. If it still feels too soft, a small spoonful of ground flaxseed thickens it more effectively than adding lots of extra oats. Hope this helps if you give them another try 🤗

Easy to come together and has the overall taste of overnight oats but it ball form. Our family would prefer them a bit sweeter, so next time, I'll likely use a tablespoon or so of maple syrup. I think, as called out in the recipe, if you have a really sweet apple, then the taste will vary. Thanks for creating something new for us to try!

LOVE these because of the nice taste of cinnamon and easy grab and go snack .
I did not have pecans so i ground up coconut instead and they look like little snowballs 😊
I used sunflower seed butter instead of almond butter because this is what I had on hand
I could not find cannellini beans so I used white kidney beans instead and they were just fine - I rinsed them when drained .
My husband just asked me for a second one 👌
loving how nutritious they are 😊

I'm very keen to try this recipe but we don't have cannellini beans here in India. Could you suggest an alternative?

Hey hey, Aastha! That’s such a great question! Cannellini beans are very mild in flavour; they mainly add a soft texture, a bit of protein, and help bind everything together rather than contributing much taste. If you can’t find them, you could use another neutral white bean such as navy beans or great northern beans. Chickpeas can also work in a pinch, but keep in mind that the flavour will be stronger and the texture slightly denser. Someone in the comments also mentioned using white kidney beans, which are essentially the same as cannellini beans, and those worked great too! 🙌

Wow, these are really yummy! You can't taste the beans at all and even though there is no added sugar, because of the cinnamon it "seems" quite sweet. I used peanut butter instead of almond butter, and almonds instead of pecans for the coating. They will be a perfect healthy go to snack for work.
