Drawing inspiration from the beloved dessert, strawberry cheesecake, we crafted these delectable popsicles. By incorporating vegan cream cheese, we introduced a hint of creaminess that beautifully complements the sweetness of the strawberries. These were a hit and so easy. Will adding more cream cheese make them creamier? Also, vegan cream cheese is very hard to get here (had to go to 6 supermarkets). What would be a good sub that is easier to find? Thanks.

Hey friend! So glad you enjoyed these popsicles! I suspect adding a little more cream cheese could make them a bit creamier, though I'd probably only increase it slightly so the flavour doesn't become too strong. The popsicles will still overall be on the hard side due to the crystal formation from the liquids in the milk and yogurt.

If vegan cream cheese is tricky to find, a thick unsweetened plant-based yogurt (especially a Greek-style one if you can find it) would be my first choice. Perhaps coconut milk though that'll make the bars even harder and, of course, add a more prominent coconut flavour. A smooth nut butter like cashew butter could also work for a richer, creamier texture, but it'll change the flavour profile a bit. I hope this helps, and do let us know how it goes if you try anything else out! ☺️

Thank you - that’s super helpful. The amount of vegan food (cheese, fake meats etc) available in Dublin is contracting on a weekly basis. We’ve gone from a half a supermarket aisle during the height of vegan popularity circa 2018 to a small shelf in most supermarkets. Back to the days 25 years ago when we had to make all our stuff from scratch ie sausages, burgers, cheese etc So recipes calling for the use of things you can easily pick up in Albert Heijn don’t really work here anymore 😢

Delicious ♡♡♡ I replaced by frozen mangoes instead of the strawberries. I couldn't use a mould, we just ate it immediately after mixing. My family couldn't resist it. It was like a fresh smoothie! It must be fantastic as an ice cream !!!

Thanks so much! The ice cream moulds were a house brand from a shop here in the Netherlands called Blokker, but they’ve since closed all their stores in the country... so sorry that’s not of much help! Any mould should work just fine though 😊
