This soup is inspired by Dutch mustard soup, it's a classic dish that has different varieties, depending on where you eat it. Every region has its own mustard, so the flavour will also slightly be different, we recommend using any dijon mustard that you enjoy! We added our own twist by adding leek and potatoes, to make it naturally creamy and filling as well.

Fantastic soup. I skipped the bread croutons and roasted chickpeas instead for more protein and fiber and it turned out great. Will definitely make again

Really interesting recipe, but I can’t find leek in my city any swap .plzz.
PUL Team - Sept. 16, 2025, 3:48 p.m.
Hey Monika! The leeks are a pretty central part of this recipe, so swapping them will change the flavour quite a bit. If you can’t find leeks, you could try using shallots - the result will still be tasty, just with a different character than the classic potato–leek combo :P

Incredibly delicious soup! I've added mustard to leek and potato soup in the past, but I would never have thought to add such a large amount. It really elevated this dish. Highly recommend serving with croutons! I made some quick ones in the air fryer.

I love dijon mustard, but 3 Tsp is, to my taste, way too much. It overpowers the soup and you don't taste the vegetables. Next time will try-out adding 1 Tsp.

Hello :) why would we not use the green part of the leek? What effect would it have on the soup if I put it in? Thanks
PUL Team - Jan. 30, 2025, 2:15 a.m.
Hey friend! The dark green part of the leek is a bit tougher and more fibrous, which might affect the texture of the soup. That said, you can definitely use it - just chop it finely and cook it a little longer to soften. It might add a slightly earthier flavour 🙂

Thank you! Good to know :)!

These are not just pretty, they are delicious and nutritious :) - thank you for your efforts to building this app and the recipes and the cinematic presentation. Loveeeeeeee everything about you guys!
Recipe comment: I needed the soup to have a little sweetness and acidity. Was gonna sprinkle in some sugar and vinegar, but opted for a tomato instead (I don’t really know how to cook. Sorry if this sounds gross to anyone! Lol). I don’t have Bay leaf either, so I drop in fresh basil. Turns out really yummy!!

Thank you so much for the love and support, Ja 🥹❤️ this comment was such a lovely start to our day! Also love how you made the recipe your own with tomato and basil - such a smart way to add sweetness and acidity. Can't wait for more nourishing adventures together ✨

PUL Team - Oct. 14, 2024, 8:06 p.m.
Hey Marguerite, thanks for sharing your experience with the soup. You mentioned the rating was more a "note-to-self" and in case you're interested, you can add private personal notes on the app under the "directions" tab of a recipe 🤗
Otherwise, to troubleshoot the soup's lack of flavour in case it helps next time, you could also try increasing the amount of garlic or adding herbs like thyme or rosemary for more depth. If you're not a fan of the Dijon mustard, experimenting with lemon juice or nutritional yeast could also add brightness or umami. Glad the croutons were a hit!

Made this last night, perfect for a freezing December night! I was a bit sceptical about the mustard, but really enjoyed it. I think this might become my new go-to potato soup. Only change I made was to add a medium finely grated potato after I pureed the soup and let everything come to a boil for a couple minutes again. It's something my mum taught me and I always do this for potato soup. Those tiny potato shreds/"noodles" have a really interesting texture and make the soup so much fun to eat! Thanks for another great simple recipe!

Hii! Thinking of making this this week. What would you recommend to add to it as a sourcw of protein that goes well with the other flavors? ❤️
PUL Team - Sept. 11, 2023, 3:18 a.m.
Hey Nova! Adding tofu or tempeh can be an excellent source of protein that pairs well with the flavours in this recipe. You can marinate and pan-fry them for a crispy texture or simply crumble them into the soup for added protein. Alternatively, you could also top the soup with roasted nuts or seeds. Enjoy 😊
