Pickled Daikon Radish

This Korean-style pickled daikon radish is a simple way to add a bright, tangy crunch to your meal. It’s slightly sweet, a little vinegary, and wonderfully refreshing. The daikon soaks up all the flavours, turning something humble into a real standout. It’s perfect as a side dish, a topping, or even a quick snack straight from the jar. It’s easy to make and keeps well in the fridge, so you’ll always have a pop of flavour ready to go.

Hiii Amy, oh you bet 🤗 this pickling brine works well with many types of radishes. Smaller varieties, such as red radishes, tend to pickle a bit faster than daikon and may have a slightly stronger peppery flavour, but it'll still turn out delicious.

Depending on the size of your radishes, you may want to slice or quarter them instead of cutting them into cubes. We'd love to hear how they turn out if you give it a try with your garden harvest 💛
