Hey Maureen! You can swap the butter beans with cannellini beans, chickpeas, or even white navy beans. Just make sure they're soft enough to mash easily for a creamy spread 🤗

I forgot to buy yoghurt so I used Sourcream and it was extremly delicious! Quick, easy and filling. 100% Will do this again.

Made this for brunch today, for two of us. It was, to quote my man, “the best sandwich I’ve ever had”. Definitely a new staple! Quick, super tasty and filling. I used pan fried shallots instead of the pickled red onions.

I made this today for lunch and it’s amazing. I used pickled silver skin onions instead of the pickled red onions and I put a pinch of chilli flakes once I spread the mixture on the toast. It was just too good and I think it’s my new favourite for breakfast, too, but perhaps without chilli flakes for breakfast.

Made this for breakfast this morning as I had a language course so needed energy and to stay full till a late lunch and this did the trick! Super tasty and filling. I added some lemon juice to the left overs to keep the avocado fresh and that works well :)
