This is awesome
Oof, usually PUL recipes work out so well, but after making 4 servings of this recipe according to the exact directions, the hemp seeds and salt were waaaaaay too present. It honestly tasted awful.. I added more avocados and more cream cheese, but the hemp seeds still overpowered the recipe. Suffice it to say, I won't be serving this to my guests... A tip for if you're making this: add a little bit of hemp seeds first, taste, and then add more to taste (and do the same with the salt). I think it possibly could be tasty that way.
Flavors were nice and simple! Texture of the stuffing was a bit off-putting for me though.. I might try just adding less filling in the future.
When I first read this recipe, I thought “What an odd combination to put hemp seeds into this🧐”. However, I could have never imagined that the stuffed bell peppers would be a new snack favourite. It is creamy without being too liquid (haha, great use of left over hemp seeds), and I used sriracha sauce instead of sweet chili sauce to add some additional heat. I was lucky to find some crispy mini bell peppers that I think is necessary for the overall texture
I used standard bell peppers halved rather than mini ones. Easy to make and tastes good
